Thank you, Pinch My Salt, for giving my family a wonderful Christmas tradition. Nothing is better for a Colorado Christmas dinner than her Manchego Sweet Potato/Butternut Squash Gratin. We served it with a cranberry-pecan salad with fig dressing and the white wine from our wedding, Joel Gott's 2009 Sauvignon Blanc, a fresh tropical citrus-y white that cut the richness of the manchego and balanced the sweet squash and potato.
