CSA Tuesday: Garlic Scape Pesto


Another CSA Tuesday has come and gone triumphantly! We have answered the age-old question: What do you do when you have 12 garlic scapes in the house and not much else? You make garlic scape pesto! This was Sara's idea, and we took our inspiration from here, and it turned out marvelous!
Here is the recipe we came up with:

1/2 lb. garlic scapes (about 15 scapes)
1 cup grated Parmesan
1 cup pine nuts
3/4 cup extra-virgin olive oil
1/2 cup of water (to thin it a bit)
30 basil leaves
Salt and lots of black pepper to taste
1 lb. pasta (one that holds a pesto well. think ridges)

Add everything except the pasta to the food processor and blend it up.
Boil the pasta until just al dente, spoon 4-6 heaping tablespoons of pesto into the pasta and mix. We served sliced yellow tomato on the side, along with extra garlic scape pesto and extra Parmesan. Yum!
