Another Brunch - Huevos Rancheros

Huevos Rancheros
1 small yellow onion, sliced very thinly
1 Tbs. "light" butter by Land O' Lakes (or regular butter, if you prefer)
2 corn tortillas
1 cup of refried black beans (with jalapenos, if possible)
1 cup of cherry tomatoes, chopped in quarters
2 eggs
1/4 c. chopped cilantro
Louisiana hot sauce or good ol' tabasco

Begin by melting the butter on low heat in a frying pan or cast iron skillet. Add the onions, and slowly caramelize them bringing their natural sweetness out. Once they are done, set them aside in a bowl, and use that "onionized" pan to fry the two eggs to over-easy. While they are cooking, spread each corn tortilla with some of the beans. Put the tortillas with beans in the microwave for 1 minute on high to warm them up.

To assemble, put the tomatoes over the beans, then an egg, then a heap of onions, and top with cilantro and hot sauce.
