A good friend from work brought me the most wonderful present possible -- cheese from a far away land! I had tried Haloumi before at a restaurant, but I had never cooked with it myself. I googled my options, and I settled on this recipe: Chickpeas with Haloumi at Veggienumnum. I added a bit more lemon flavor to the chickpeas, and I thought the mojo was a touch too salty, but other than that, this recipe was AMAZING! My husband said it felt like we just found an amazing new restaurant! Quite a compliment!
