Chorizo White Bean Soup with Greens



1/2 lb. chorizo or other sausage
1 carrot, diced
2 small leeks, sliced and cleaned well
1 rib of celery, diced
6 cups of water
1-2 tsp. of better than boullion (veggie) or 1 large boullion cube
2 cans of canellini beans, drained and rinsed
1/2 tsp. Herbes de Provence
1 cup frozen chopped spinach or collard greens
Remove the sausage from its casing and saute in a hot soup pot. After sausage browns, add in leeks, carrots, and celery. Saute for 3-4 minutes. Dissolve boullion cube or Better Than Boullion in water, and add to the sausage and veggies. Also add beans and herbes de provence. Bring to a boil, and allow to simmer for 1 hour or more, if you have it. Add spinach or greens, and cook for 15 more minutes. Serve with crusty bread, and enjoy!
